Met dit bananenbrood krijg je snel een verzadigd gevoel. Het is heerlijk als tussendoortje, als je bijvoorbeeld gaat sporten. Maar ook om als ontbijt te eten. Of in plaats van een stuk taart! Van bananen krijg je namelijk veel energie en ze vullen goed. Dit bananenbrood is daarbij ook nog eens glutenvrij, omdat het van amandelmeel gemaakt is. Ben je benieuwd naar dit heerlijke recept? Ingrediënten
- 150gr amandelmeel
- 3 rijpe bananen
- 40gr dadels (zonder pit)
- 40gr gedroogde vijgen
- 60gr walnoten
- 3 eieren
- 1/2 tl zout
- 1 tl bakpoeder
Zo maak je het
- Verwarm de oven voor op 175 graden.
- Verwijder de pitten van de dadels en snijd de steeltjes van de gedroogde vijgen.
- Doe de dadels, vijgen en de rijpe bananen in een blender en mix ze tot een fijne beslag.
- Doe de eieren in een kom en klop deze goed luchtig.
- Haal het mengsel uit de blender en roer het goed. Doe ook het amandelmeel en de geklopte eieren erdoor.
- Hak de walnoten grof en meng deze samen met het zout en bakpoeder door het beslag.
- Bekleed het cakeblik met een vel bakpapier en doe het beslag erin.
- Plaats het cakeblik nu in de oven voor 55 minuten.
Tip: Versier je bananenbrood met een gehalveerde banaan en wat walnoten, voordat je het in de oven doet.
